Happy Pi Day (3.14)! Last week I found this amazing salted caramel chocolate pie recipe on Facebook and well…..let’s just say it did not disappoint on any level. It was such a huge hit I had to make two more pies to share with friends and neighbors. This is going to be the pie you bring to every potluck and family gathering because it was so incredibly easy, like 5 ingredients easy, and it is unbelievably delicious.

Salted Caramel Chocolate Pie
Salted Caramel Chocolate Pie Ingredients
- one package Oreo cookies {or cheat and buy a premade Oreo pie shell}
- one package of dark chocolate chips
- one stick of butter, divided in half
- 1 1/4 cups of heavy whipping cream
- 2/3 cups of brown sugar
Directions for Dummies
- Crush the entire package of Oreos. I pulsed them in my food processor but you can put them in a baggie and crush with a rolling pin if you don’t have a food processor.
- Add half stick of melted butter to the crushed cookies and press into a 9 inch pie plate. Put in the freezer to set while you make the caramel.
- In a sauce pan, melt the other half stick of butter and add 2/3 cup of brown sugar. Continuously stir until it forms a soft, thick, bubbly consistency. Remove from stovetop and slowly whisk in 1/4 cup of heavy whipping cream. Let the caramel mixture cool for 15 minutes and then pour over the Oreo crust. Put in the freezer for 30 minutes until the caramel is set, not frozen.
- This next step needs to be done 10 minutes before you take the crust out of the freezer. Place chocolate chips in a glass blow. Bring 1 cup of heaving whipping cream to a simmer over low-medium heat. Pour over the chocolate chips and let sit for 5 minutes. Whisk the heavy whipping cream and melted chocolate chips until blended and creamy.
- Pour chocolate over caramel layer and even out with a spoon. Refrigerate for approximately 1 hour or until set. Before serving sprinkle with coarse sea salt.

- Friday- Grilled cheese and vegetable beef barley soup
- Saturday- Hot dogs & brats with sauerkraut and roasted peppers
- Sunday- Key Lime Salmon Patties, potato pie and green bean salad
