White Bean Chicken Chili & A Virtual Chili Cook-Off


I don’t know about you but when the temperatures drop in the Midwest my slow cooker is used so much that I keep it on the countertop at all times. I love coming home from work on a cold night and walking through the door to the smell of dinner in the air. I plan my weekly menu around what we can make in the slow cooker and white bean chicken chili is a favorite in this household as well as Dr. Pepper Pulled Pork, Vegetable Beef Barley Soup and Bow Tie Pasta Soup just to name a few of our favorite recipes.


If you know anything about my cooking, I find it hard to stick to a recipe and this chili is no different than any of my other  recipe mash ups. The original recipe calls for pork loin but I have substituted chicken breast. The original recipe also called for Tomatillo Salsa Verde but I substituted fired roasted tomatoes and I have also added jalapeno to kick up the spice factor but you can leave it out if you don’t like spicy foods. Even with all the substitution possibilities, I am convinced that all the yummy toppings are what really make this soup so amazing.

White Bean Chicken Chili
This white bean chicken chili is easy to prepare with left over chicken and ingredients readily available from your pantry. This particular recipe isn't spicy at all but you could easily add some jalapeno and increase the heat factor.

  1. Add chicken broth, chicken, beans, tomatoes, green chilies, onion and seasonings to a 4 quart slow cooker. Simmer on high for 4-6 hours. Once the chili is done cooking, top each bowl with the optional toppings: dab of sour cream, shredded cheddar cheese, diced avocado, green onion and fresh chopped cilantro. Salt and pepper to taste.
