Bow Tie Pasta Soup has quickly become a family favorite in our house. I am an avid user of my crock pot and this unbelievably, delicious soup is one of the many recipes I have simmering on a weekly basis. I can’t even explain to you how good it is so you are just going to have to trust me and break out the ole’crock pot and give it a try. {OK, it is just as amazing simmered on the stove top for an hour or two.} Here is a hint on how awesome this soup really is….there has never been a leftover drop of Bowtie Pasta Soup in my house.

Cooking confession, until Bow T ie Pasta Soup, I have never cooked with wine before and it has literally transformed my soup making world. What on Earth was I waiting for? Well, another confession, I am not a fan of red wine because it reminds me of church wine. My friends have diligently tried to sway me from my favorite Chardonnay and I am slowly coming around. At least when I make Bowtie Pasta Soup I finish off the bottle of red wine because wasting wine is a sin.

Bow Tie Pasta Soup Ingredients

  • 1 pound of Italian sausage
  • 1 green pepper diced
  • 2 stalks of celery diced
  • 1 small onion diced
  • 4 cups of beef broth
  • 2 cups of red wine
  • 1 (28 oz) can of petite diced tomatoes
  • 1 tsp oregano
  • 1 tsp parsley
  • 1 bay leaf
  • 2 cups of cooked bowtie pasta
  • parmesan cheese (optional)

Brown Italian sausage and reserve grease. Sautee green pepper, onion and celery in reserved sausage grease. Add all ingredients, except cooked Bowtie Pasta, into pot and simmer for a minimum of one hour maybe more because you want to cook off the alcohol. {two hours or more on a high setting in the crock pot is best but make sure you cook off the alcohol}. Add cooked Bow Tie Pasta and sprinkle with fresh parmesan cheese.

Don’t have a crock pot? I don’t have a “crock pot” either….I use my rice cooker/steamer/slow cooker that literally sits on my counter all the time because I use it so much. It is so versatile and I have gotten more than my fair use out of this appliance over the last 5 years. It cooks at the perfect even temperature and automatically switches to the warm setting once the programed cooking time is complete. One more thing, it has a locking handle that makes it super easy to transport to and from those potlucks.       I am going to add an update. Make sure you cook it long enough to cook off the alcohol taste from the wine. All crock pots are different and it might take longer than what I suggested. When I make it stove top I simmer it for about an hour or a little more….crock pot time should be doubled on high. Enjoy!
