My Journey: Whole30 Day 18
Whole30 day 18 and my food prepping over the weekend has already paid off. I made a whole chicken in the crock pot and pulled the white breast meat off and shredded it for the protein topping for our salads throughout the week. I used the thigh meat for chicken tostadas tonight and it was quick, easy and delicious.
If you’ve read any of my other non-Whole30 recipes you’ll know that I find it hard to follow a recipe. I attempted a new recipe tonight for cauliflower tortillas but it ended up being completely different but still delicious. I would describe it as a flat veggie frittata. Here is the recipe I used as a foundation but I added some spices and almond flour to hold it together better. It was the base for my tostada which I piled high with all the toppings.
Whole30 Day 18 Menu {food choices}
Breakfast:
- 2 hard boiled eggs
- mixed raw veggies
- blah-ck coffee
Lunch: {went to a restaurant}
- mixed greens salad with avocado
- grilled shrimp
- cilantro lime vinaigrette
Snack:
- almonds & cashews
Dinner:
- cauliflower veggie tortilla
- taco seasoned chicken
- tomatoes, olives and avocado
- salsa verde
Whole30 Fitness {Fitbit Steps}
After my high stepping weekend I am so happy that I made my week day goal of 5,000 steps today. Also, I am happy that my back pain has subsided once again. I think that my body will need to slowly adjust to the 10,000 step goals and weekends only is a good thing. Once the weather warms up consistently I plan to add more steps to my week days. It actually felt good to have so much purposeful walking this weekend.
Whole30 Emotions {Comfortable}
I have to say that I have comfortably settled into my Whole30 routine. I don’t have obsessive thoughts about non-compliant foods, I don’t feel deprived or starved, I am not overwhelmed with the amount of cooking and prepping I have to do and I feel great. I do have a little anxiety about eating in restaurants because there are so many hidden ingredients and I don’t want to reconstruct my menu choice.
Today I went to one of my favorite Mexican restaurants and I asked for the vinaigrette dressing. It was a little sweet and I am guessing there was sugar in it but hoping it came from the citrus and limes. Regardless, I made the healthiest choices possible with what was on the menu. I ended up putting the fresh salsa on my salad and it was delicious.

I have asked before if there’s sugar in the dressing. If there is, then I ask for oil and vinegar or in your case you could have asked for lime and oil and cilantro and made your own cilantro lime vinaigrette! I have a friend who only eats raw plant-based foods and she explains that to the waiter and they are usually willing to help her figure something out. I’ve gotten over my fear of asking for a change. In this day and age with everyone eating gluten-free, dairy-free, grain-free, etc I think it’s becoming the norm…
You are right. I am going to ask next time because it is one of my favorite places to eat around my office.
