My Journey: Whole30 Day 11
Whole30 day 11 and today I noticed that I really have no appetite. I sometimes forget to eat and have to remind myself to eat. Who forgets to eat? I really enjoy the food choices that I am making and I am very satisfied with my meals. I also noticed that I stay full longer and I just don’t think about food like I used to but my eyes are definitely bigger than my stomach, my head is filled with recipes and food I want to try and my fridge is overloaded with food.
Speaking of new recipes, one of my co-workers made something similar to this shrimp dish but I made up my own recipe. I sautéed the shrimp in ghee and seasoned it with salt, pepper, onion powder and smoke paprika and removed it from the pan. Then I sautéed cubed sweet potatoes and onions in the pan and added a little olive oil. Then I used my Pampered Chef Julienne peeler and made zucchini “noodles” that I sautéed with the sweet potatoes and onions. {Note to self: zucchini noodles get soggy fast so a couple of minutes in the pan is ok.}
My Whole30 Day 11 Food {Menu of the Day}
Breakfast:
- hard boiled egg
- assorted raw veggies
- almonds and cashews
Lunch:
- vegetable frittata with chorizo sausage
- coconut Larabar
Dinner:
- Garlic zucchini noodles with sautéed onions, sweet potatoes and shrimp {this was awesome}
My Whole30 Fitness {Fitbit Steps}
Today I logged 4,500 steps and I made sure I got up from my desk all day long. I even too the long way to the bathroom which is an extra 80 steps and I parked far away for even more extra steps. I am thinking my weekday goal should be 5,000 and my weekend goal should be 10,000. {At least until the weather improves.}
My Whole30 Feelings {motivated}
According to the Whole30 timeline days 10 & 11 are the hardest days when someone is most likely to quit. I have to say I am feeling great and I am more motivated than before. I have no doubt that I will get to the finish line and will probably continue with another 30 days. Time will tell.
You can continue to follow my journey at Whole30 Day 12.
Your zucchini noodles look DELISH – I would totally make them! I usually do spaghetti squash, but the zucchini would be a great change of pace. 🙂 I’d have to switch out the shrimp for chicken, but that would be easy enough to do. And good job on all your steps!! 😀
The noodles were awesome….I will be making them more often.
That looks like a yummy dish, but like Sarah, I’d need to switch to chicken. I’m not a fan of shrimp…
Chicken would work well too but I do love the shrimp.
