Whole30 day 15 means that I am at the halfway point of this challenge. Yeah me! So far my biggest challenges have been no coffee creamer, Friday night wine and cheese on my burger. All those things aren’t worth ruining how good I feel. I have a lot of energy, I feel more focused and my clothes are fitting so much better.

The challenge of creating compliant recipes has been fun too. I took my recipe for stuffed green pepper soup and doctored it up with more veggies to replace the V8 juice and left out the rice. Tasted exactly like the original recipe and we didn’t  miss anything I took out. {The recipe is below my menu.}

My Whole30 Day 15 Food {Menu of the Day}

Breakfast:

  • Unstuffed Green Pepper Soup
  • blah-ck coffee

Lunch:

Snack:

Dinner:

  • Roasted sweet potatoes, onions and asparagus
  • Chorizo sausage

Unstuffed Green Pepper Soup

  • 1 lb browned ground beef
  • 1 can diced tomatoes {28 oz}
  • 3 cups beef stock {beef bouillon can be used}
  • 1 1/2 chopped green pepper
  • 1/2 cup chopped onion
  • 3 stalks chopped celery
  • 1 bunch of asparagus tips
  • 1 clove crushed garlic

Throw it in the crockpot {affiliate link} and cook for 3-4 hours, or until veggies are tender. {All crockpots vary.}

My Whole30 Fitness {Fitbit Steps}

I logged 3,000 steps today and I am NOT beating myself up over it either. I am busy at work, the weather sucks and I am not giving up sleep to walk earlier in the morning. The weekends however, are another story and I will get my 10,000 steps in on those day. I will make the time to get out and walk.

My Whole30 Feelings {refreshed}

Not sure why, maybe detoxing chemicals from my food and body are clearing up my head, but I have taken on a new attitude about how I spend my time. Work smarter, not harder. I am cleaning house with things that have been dragging me down and it feels so good to make some progress in the right directions.
